In Seach of the Jackalope

The Jackalope is a mythical animal of North American folklore described as a jackrabbit with antelope horns.  We went in search of this mythical creature at the Jackalope Ranch, an amazing dining establishment in Indio, California, which just so happens has a great happy hour.  Lucky, right? 

There is a main dining room, very elegant and outdoor dining.  We and most other happy hour folks opt for the patio.  This place is huge and busy.  This is the first time we have waited for a table on the whole trip.

The grounds around this restaurant are just unbelievable.  Tall palms, lush grassy expanses surrounded by beautiful gardens and amazing waterfalls.  



The margaritas, well, what can I say but, I loved them. The food on the happy hour menu was wonderful, all we could eat.




Inspite of what the shirt says, we both agree, Jackalope Ranch rocks!
